Often in recent years we talk and read about the "Mediterranean diet" and its value. It is a lifestyle that offers wellness, vitality, good health and longevity. Vegetables, fruits, legumes and cereals are the ones who consolidate as a more healthy diet after years of scientific studies. Ensign of the parade: the bread, the basic and traditional food of man. The first and only good food, that may be on our daily meal and can accompany all other foods. The increased nutritive value of all types of fresh bread is a true because it provides our body considerable energy in the form of carbohydrates and protein. The changes in the diet of modern man, and the development of food industry, led to supply many food products with differentiated cost and quality. The quality difference in bread comes from the used flour and specifically how it's being treated to achieve the maximum retention of its nutrients. The white bread is made from flour milling husked grain cross leading to "burn" a large part of its nutrients. In contrast, whole grain flour, which we produce the 'black' bread, accepts the smallest grinding. During its production we use wholegrain, making its true dark color, but it is rich in vitamins, minerals, fiber, iron, zinc and calcium. Calorie wise the two species are similar and maybe the black bread contains more calories. The difference lies only in nutrients. The nutrients that the bread gives us: • The fiber (carbohydrate) needed for good digestion and proper bowel function. • The starch (carbohydrate) gives energy to the body and is the only food of the brain. • The gluten (protein): helps build and maintain muscle system. • The Vitamin C: good for the antioxidant action. • The vitamins B1 and B2: responsible for the well being of the nervous and digestive system, skin and eyes. They also help to release energy from food. • The magnesium (metal) with antidepressant activity. • The fiber: protect against cardiovascular disease, eliminate cholesterol and lower bad (LDL) cholesterol. Contribute to the saturation of the stomach, good digestion and proper bowel function. Obvious is that, regardless of age and lifestyle of each, bread is a healthy option for a balanced diet. So everyday eating reasonable quantities and variety of breads, along with other foods, we can have our body "filled" with all the nutrients that are necessary to cope with increased demands of our everyday lives.
